The 2015 harvest was very warm and dry. This was an important challenge for the wine’s profile that we look for, fresh and drinkable wines! The harvest key was to pick in the right moment. We had to pick soon, and during the elaboration be careful not force getting balance with the extraction at the same time.
We processed 8,500 kg grapes (2,100 kg/ha), and we did two different elaborations:
“SIN BLANCA 2015” ELABORATION:
Grapes coming from all our vineyards (7,800 kg). We destemmed totally, and crush partially the grapes.
The alcoholic and malolactic fermentation was done in concrete tank. Ageing in French oak barrels, 10% new barrel, 20% 500 litres barrels, the rest were used barrels of two or three wines before. The aging time was of six months.
The fermentation was done with indigenous yeasts. We didn’t acidified. Additions: sulphur dioxide (Total sulphur: 40); clarification with egg-white.
